Chef Iain Duncan grew up in Sacramento, California where his culinary career began at the age of 17 as a line cook in an authentic Italian restaurant. After moving to Maui in his early 20’s to work over 15 years at some of Maui’s most prestigious establishments: The Plantation House (Kapalua), Lokelani (Maui Marriott), Hula Grill (Kaanapali Beach), the Banyan Tree (The Ritz-Carlton, Kapalua), and Chez Paul French Restaurant (Oluwalu), Chef Iain mastered the artistry of Pacific Rim Hawaiian Regional cuisine and Country French cuisine.

From 2006-2019, Chef Iain owned several restaurants in Corvallis with different styles: Country French cuisine with large portions and wonderful sauces, Hawaiian Regional cuisine with Asian flavors and creamy European style sauces, Italian cuisine with premium quality steaks from local ranchers and local flavor twists, Southern Barbecue & Classic Pub menu with house-made sauces.

Chef Iain has been a member of The Corvallis Club since 2006, and now enjoys being the Executive Chef and Director of Food & Beverage providing a variety of cuisine options to The Corvallis Club members. It was exciting to open the Martini Bar and Fine Dining Room in 2021 perfect for your Rehearsal Dinner for up to 36 guests. Chef Iain was also recently voted one of the top chefs in The Willamette Valley. His focus is on quality first with excellent service.

He especially enjoys meeting with couples to plan customized menus for their special events based on their individual style, and preferences and working within their budget to offer the highest quality of food and beverages. His goal is to have members and guests raving about the food after an event, remembering the quality, and complimenting the flavors of the excellent meal.
